It pains me to admit this so early in the game, but I can't get past this mission. I've made several attempts but can only defeat one of the headhunters before Vaan falls. What's the correct strategy?

Early in the game? As in, the Mines? You're not supposed to fight them, you're supposed to run.
I messed around early in the game and got a bunch of licenses...defeated them all with 'Dark.'

Okay now that we have that out of the way...here's a suggestion that I copied straight from my guide (to make things faster):

You may summon one extra Esper (I recommend the imp because all but one of your enemies are Melee). I suggest taking care of Gijuk first (group your party to the bottom of the screen where he'll go). After that, stay on top of resummoning your Espers; and don't forget to use those handy abilities everyone has! If you're pretty careful and swift everything should be fine here.

...Does that help? In all seriousness it is kinda hard if you're just getting the hang of the mechanics.

Wait, Espers can be resummoned?! I'll have to give that a go. I had completely forgotten about abilities and Gambits, too. No wonder I was finding it so tricky.

??? You know, they had lots of tutorials over that stuff.

But yeah, set Penelo's ability to...um...I think Curaga? That should help tons. Also you'll soon get a healing esper that should help things out.
