You can't use vitamins after Pokémon has reached 100 EVs on a specific stat, eg. Carbos to raise speed if Pokémon has already gained 100 speed EVs. Means that you can use the max amount of vitamins per stat (10) on Pokémon that hasn't gained any EVs on that specific stat yet.

And vitamins can't overcome the 510 EVs limit, either.

so, if i were to use a vitamin on a pokemon w/ 91 EVs in that stat, would it go to 101 or stop at 100?

You couldn't use it at all. It'd say something about uneffectiveness.

really? i just did that and it worked at <10 EVs from 100 o.O so it has to be one of the two.

No, it will work, you just cant go above 100 evs using the vitamens alone, so you can go 10 in each of them if you wanted.
