Any certain way to do it? Like if I was to ev in attack/def/HP, how do I know what I've EV'd 252 in each but HP?

first of all, max the stat with the vitamins, assuring u that u have 100 2 start with. Then I use one of 2 methods:
-use the counter app with the power items. Count up the EVs as u get them. (mostly used when i use trainers and VS seeker 2 EV train.)
-use normal pad and pencil with power items. Mark on the pad when u get the EVs. (mostly used when battling wild pokemon 4 EV training)

Alas, I have lost track many times. But either paper and pen or counter app. Too bad there is no way to see your evs.

Paper is the most reliable, because the counter resets if you turn off your DS. 100 up with 10 Vitamins, then Power Items and hopefully Pokérus while battling things. If you're absolutely desperate and don't want to go through the Battle tower for very long use Muscle Band, but it'll take way more time.

There is no way to calculate IVs or track EVs if you've battled with a Pokémon apart from full erasing every stat.
